Default Small remote recording setup - revised

Thanks to your generous comments, a fair amount of reading, help from
a friend in TV audio and a slightly increased budget, here is what I
am now looking at. Total now comes to around 6300 CDN (= 4500 US)

The goal is to record
1) rehearsals and (eventually) concerts : choir of 55 - 50 members,
rehearsal accompaniment will be piano or pipe organ, concert
accompaniment will be piano, pipe organ or chamber orchestra (35
instruments). The choir concerts often include soloists. I can rent
additional mics for concerts.
2) practice tapes or CDs for the choir members to learn their parts :
accompaniment here will be piano. Best possible scenario is one
recording session with one voice per part followed by 4 different
mixes to highlight each voice, but realistically I may have to record
each voice + accompaniment separately.

Proposed equipment

Mics : 2 Audio-tech AT4040 (large diaphragm)
1 AKG CK 91 (cardiod capsule)
1 AKG CK 92 (omni capsule)
1 AKG SE 300 B powering unit
Pre-Amp : SMPRO Audio PR8
Recorder/mixer : Yamaha AW4416 (demo unit @ 3000$ CDN = 2200 US)
Monitors : Tannoy Reveal Active
Headphones : Sony 7506
