Nobody has recommended ProTools yet, so I'd put in a vote for that. I don't
think there's a better multitrack editing/mixing program for the Mac, period.

You also might investigate Deck (from Bias, Inc.) and Apple's own Logic.
Logic has the advantage over ProTools of being far less expensive, but I
would give the edge to ProTools, just on sheer usability, and having the
greatest number of users and plug-ins available.
