Default Logic audio question

My instrument lets me set up sounds on multiple midi channels but when I
select it in the arrange window it defaults to midi channel 1...
If I make multiple tracks in the arrange window then change the midi channel
of one, they all change so I can't figure out how to have multiple midi
channels sent to the same instrument.

You have to go into the environment and create a multi instrument or several
single instruments. If you just copy it in the arrange window it's still the
same instrument in which case all changes to one instance will affect all of
them.
