Default How do I tell which A/D Converter is better

Hi pro's,

although I am just a re-beginner with electronic recording (I left the
recording scene when MIDI was around and an ATARI 1040 ST was pretty
new), I have the feeling, that this might be the right place to ask :

If I have 2 A/D Converters, let's say sampling rate 44.1 kHz, 16 Bit
resolution, how can I really TELL which one's the better one ?

And, probably in addition to the above (just cam in mind while writing
this), I can 'imagine' that 20 Bt is better than 16 - but how to 'prove'
it (to myself .....) ?

Is this all done 'by ear' (which would assume, that I have THE ears) or
can I 'measure' this in some magic way ?

Can I, i.e., look at the resulting wave and 'see' that there's something
missing or such ?

Sorry, if this is an absolute beginner's question but since I am
catching up about 15-20 years of music electronics and an ADAT is a unit
which I would have given a fortune back then, I feel a little lost what
to look for when buildiong up a analog/digital-mix Studio (mixer should
be analog, saving of the 'music-data' should be digital).
