Can you even buy a 5.1 receiver these days? I thought they were all 6.1 or
7.1 or who knows what else is the latest.

In Toronto, you can buy 5.1, 6.1, 7.1 and 5.1 without DTS funny enough.
Many think 6.1 is not worth it because how many DVDs or CDs use the
technology?
Just a noob
and probably wrong but what the heck!

It may not be worth it, but it's not much more expensive to make or
purchase. The old DVD's are forward compatible with 6.1 or 7.1 receivers.

If you find a 5.1 receiver for sale, it must be new old-stock or used.

What brand and model of 5.1 have you found for sale?

I stand corrected. The Yamaha website shows a 5.1 Receiver that is
available:
http://www.yamaha.ca/av/Receivers/HTR_5730S.jsp

I didn't see any 5.1's on the Sony website. You can check the other brands.
