OK , so why do they still bother making 2 channel amps? cost?

Many people do not need the added flexibility, so there is a market for
2CH amps. Many simple applications rely on the head unit amp with a
subwoofer and small 2CH amp.

No, it's the demand part of supply and demand. Two amplifier channels are
perfectly adequate for a great number of users. And it should be of no
surprise that a 50x2 amp costs less than the equivalent 50x4...
