Default Equivalent of recording "What you hear"

I've had cheap audio interfaces in the past that would
let me use the stage next to the stereo out as another
sound input. I think I want something similar now; maybe
there is a software solution.

I'm sending midi events via a software midi patcher from
csound to kontakt. I want csound to make noise and send
MIDI events that make Kontakt make noise. My soundcard
is an Echo MIA MIDI, and it has four stereo virtual outs,
so hearing the audio from both applications is no problem.

With this setup however, I think I'd have to route the audio
output through my mixer and back into the soundcard in order
to have another software package pick up the audio. It seems
that there must be another way to capture the output of both
audio applications without straying from the digital domain.
