Okay, so you want something as versatile as possible, you want the ability
to actually set the parameters, and you only care about balanced analogue
signal, you don't need AES/EBU or multichannel stuff.

I would suggest looking at the Sony stuff. In the $5k range you get the
nice sampling reverb system, which actually gives you more control than you
would expect from a sampling reverb. For under $1K you can pick up the
DPS V-77, which is a really nice and fairly versatile reverb unit. It does
hall sounds very well, and it gives you a lot of freedom to tweak the
parameters so you can match a dry track to one recorded in a hall fairly
well. The digital I/O on it is kind of temperamental, but you don't care
about that. For under $500 you can find the DPS V-55, which has a little
less compute power and a little less flexibility, but still perfectly
acceptable sounding algorithms and reasonable control.

There are plenty of other boxes out there in the same price range from
guys like Lexicon and Yamaha that are fine also. But the Sony boxes have
a lot of performance for the money and the user interface isn't bad.
