I think "ambient" may have been misused in the OPs paragraph, no?
That he was trying to get an interview mic for ambient situations,
since he said "ambient stories" not ambient recordings. So if this
were the case he'd want a hypercardioid or similar for the interviews,
not an omni to record the background sounds.

Standard interview mics are omni. Good mic technique takes practice & most
interview subjects don't have it.

If you put a microphone in front of a person who doesn't talk into
microphones every day, it better be an omni if you want to actually record
anything.

If you put a hypercardioid microphone in front of a person who does talk
into microphones every day, you still better tell him ahead of time that
it's a hypercardioid if you want to actually record anything.
