You don't have much height to work with and it's important. Keep what you can. There are ways to be creative with it or make it functional. Hang the projector from it or put a cable trough in the soffit. Make it work for you, and if possible, look more or less intentional. Perhaps make some smaller beams that go out from it at perpendicular angles, trim it out, and make it look like like an elegant squared off ceiling from a nice old library.
