out is stereo, so I envision a meter with the ability to take two
voltages and always send the highest one to the meter circuit so I knew
if one of my mics (I record in stereo) was in danger of clipping.
This might be a good time to invest in a small mixing board. As you
seem to be aware, optimum levels are the key to quality recordings. A
mixer gives you convenient control of levels from a range of sources.
