Default minimum dimensions

Just wondering what people think is the minimum room volume (or dimensions)
for a grand piano to sound REALLY good in...

Depends on the piano. A Steinway can sound just fine in a 200-seat
hall, but a Bosendorfer will want a lot more room than that.

If you're doing the close-miked Yamaha thing, you could get away with
500 square feet if you had a high enough ceiling, and not feel too bad
about it. That won't do it for classical work at all, though.

My bad for not being specific enough. Lets say a Kawai grand being used for
jazz. And lets also say this is for studio recording, not live. If I were
planning the construction of a room for this purpose, what would be the
smallest I'd want to make it?

As Scott said a nice high ceiling is best, I would think atlest a 24X16 foot
room would be a bare minimum.

I think you could live with 500 square feet if you could make the ceiling
high enough. You're going to want a fairly live room for that sort of
thing, and if it's too small, a live room will sound boxy. I'd go larger
if I could.
