Use minimalist miking techniques - coincident
pair if desired. Use one of those heads with the
mics in the 'ears'. Pay attention to the biggest
instrument in the room - the room itself! Make
it a good production, and it can be done in analog
or digital.
The biggest difference is processing in Post - how
much or how little. Lay off the excessive processing,
and you'll have a very realistic capture of what
went on in that hall.
