Most Bible scholars believe that it was not written by Moses, but by people living after his time and edited together by a single person, usually called the "redactor". There are disagreements about which parts were written by whom, and who the redactor was.
Check out the book "Who Wrote the Bible?" It's a good read.
The "most humble man" line is still a good joke.
It's a bit like learned sages arguing over what colour dresses fairies
wear. Amusing but more revealing of them than the subject.
