Why do live recordings sound "better"?

bootlegs are another story.
Well, some of them were 2-track mixes that were then spliced together into
something simulating but not representing a concert.
How was the Steppenwolf Live album done? That has some of the most glaringly
obvious edits, but the performances are stunning.
