How do I do that when my house is on the low end of a slope? Build a
moat?

If there's lower ground somewhere further beyond the house you can make what's
called a French drain or French tile, or maybe now you can call it a Freedom
drain if you value idiocy over intelliegence. It's kind of a rock filled moat,
but it has to have lower ground to empty out to.
