Default Which Center: Revel, Thiel, PSB, Aerial, Vienna, Sonus Faber...?

That is part of the problem. The Kef 107 are vintage speakers and not
everyone, even sellers, are familiar with them any longer. The new
line of Kef speakers have a complete different concept from the ref.
107 which were build in the 80's - early 90's, before the advent of
surround sound. I did go to a couple a stores and a salesperson
suggested to look at the Vienna's. Incidentally it was not available
in the auditioning room. I have been reading over the internet a lot
and I am reaching the point to go mad...

speakers in your room....only you can know that. Next best would be to a
couple of KEF dealers to determine if they have a better KEF center (some
brands have two levels), or could recommend another brand that matched.
