This is not difficult. Do a run-through, set your mic preamps so that
the level never gets higher than -10 dBFS, and start recording.
Preserve the wide dynamic range of the horns. That's part of being a
horn.
If you feel that you need to compress in order to get a good mix, do
it when you're mixing.
