Record them in stereo with 2 microphones. I do a lot of tracking with a
coincident or near-coincident pair, sometimes pointed off-axis of the
source so that you don't get that "everything is stereo so nothing is
stereo effect". Kicks the **** out of any potentiometer-generated
panning.
