i need to transparently record mechanics inside a garage working on
their motorcycles.

So, go to a place that rents motion picture sound gear and rent a field
kit with a single-point stereo mike.

any specific make/model mic? i'm not allowed to be in the garage
during recording. it's set it and forget it.

The Sanken single-point is popular. A lot of rental places will have
a pair of Schoeps with angled gadgets so they can be put together on
a boom. That's fine too.

Leave yourself PLENTY of headroom.

You may want to look into PZMs (Shure 918 or Crown, etc.)

Also, something to consider is the safety of the equipment. Do they know
they are being recorded and cool with it? Or is this for a employer or law
enforcement "intelligence gathering" operation? If it's 'secret' you may
need to worry about size and concealment. And if it's not for a documentary
or reality show but someone is trying to bust them, and they find the mic's,
is would be a costly shame for the equipment to become literally lubed and
torched! ;-)

If you are just trying to hear reproducible dialog this stuff works well.
And it's small enough to be placed undetectable in the various paraphernalia
in a garage.
