Some people think so. But how long is your run? And at at what sample
rate? And how many cables do you need?

And why not just buy two conductor shielded cable specified for AES/EBU
transmission like Belden 1800F?

Because I've got CAT5 and I don't want to spend any more money.

Then make one up and try it. Either it will work or it won't. It
probably will. But feel free to worry about whether it's compromising
your "audio quality." You know that cables cause jitter and jitter
causes subtle changes in the soundfield that only virgins with silver
tiaras can hear, and that's only on alternate Tuesdays in months with
an R.

Actually, I worry about dropouts when someone turns on a bit of
equipment and ****s its miniscule noise immunity.

On a balanced run with twisted pair cable?

If the run is long enough, yes.

If you're going to worry, then just buy the cable designed for the job
and get on with your life. If you know you're doing something
questionable you'll never know when you're going to have a problem.

Actually, Cat5 Ethernet cable is twisted pairs and fairly well
impedance-controlled. Some are better than others, and not all Cat5
cable is created equal. Do you have any Cat5e or Cat6 cable lying
around? That might be better. Belden's MediaTwist cable is specifically
designed to be very well balanced, and it even works well with analog
audio. AES/EBU interfaces are balanced, and with the twisted cable,
noise immunity should be pretty good.

But if you want to save $25 and worry, go ahead.

Nicely stated!

We have MediaTwist for most of our AES/EBU runs and it works great. You can
get it really inexpensively if you do a little hunting around.

Maybe. It doesn't meet the spec, but it will mostly work. Be sure to use
the patch cable, which is stranded; solid-core cable will break at the
joint when used with XLR cables if they are moved around at all.
