I have a nice Stereo am/fm/cd changer setup for a standard 4 speaker
configuration.
The car I want to put it in has 2 speakers

Can I just connect the 2 Front channels and go for it?
I seem to remember back in the old days there was always a concern about
blowing an amp if there wasn't a resistance connected to terminate it. Is
this still the case or was I wrong to begin with?
If that is the case can I just put 8 or 4 ohm resistors as terminators?
I really don't want to add more speakers - It's a Suzuki Samurai (89)

I'm no pro...but as far as I know you're not going to have any
problems. Just make sure the rear channel wiring doesn't short out on
anything so clip them of and tape the ends. Of course, I say you
should find yourself two more speakers!

Yes, he's right. You should be fine with two speakers.
