Jazz, classical, folk.
I have written "portable" to say all that a man can bring himself: a record
machine, one or two microphones with their stands and cables. One or two
tracks max.

My recommendation is an iBook with a Tascam US-122 front
end. The software that I recommend, with the reservation
that my apprasial is based solely on the info at their
website (including the fact that it's $79), is Intuem 2:

It looks like an incredible package for the money but I
haven't yet tried it out. I got Digital Peformer a while
back when there weren't any decent low cost solutions for
the Mac.
There is a universe of low cost but effective mics out there
and I'll let someone with more experience with them address
that.

For battery operated portable:
Zaxcom DEVA.
Definately on my list
10 second pre-record buffer and confidence monitoring.
4-10 tracks depending upon configuration and money spent.
You did ask for State of the Art.
