If I'm watching a stereo television station or watching something from a
stereo VCR on a television with just one speaker, does the TV combine the
left and right channels or does it just use the left channel?

in theory it should combine them. I have a portable cassette radio that
is mono and only plays the left channel so I assume some TVīs may do the
same!

Assuming this is a monophonic TV, then the tuner will just play back a mono
mix, summing the left & right stereo broadcast.

If you play back the VCR via an RF (channel 3/4) signal, it'll play back the
same way. If the TV set has an audio input jack, I'm guessing it only has
one. For that, you'd have to combine the left & right audio outputs from the
VCR to mono; in a pinch, you can just use a Y-connector to do this, but it's
not necessarily the best way.
