There's a little bit of that available, mostly from little-known
musicians, but not much from the famous folks. A market waiting to
be tapped, in my opinion.

Maybe it is, can understand why with flak it might be easier
to get high quality tracks to "mix your own" but can
understand why the famous folks might be quite resistant.
After all, the work is intended to be heard as the artists
intended.

I could see some of those folks releasing some of their
material in this way, especially for educational purposes,
but complete catalog ... hmmm

IT would be something folks like you and I might be
interested in looking at, witness the thread that went on
here a few months back re the percussion on Marvin Gaye's
track. But, releasing 'stems" and the like to the public
means that others can convey an artistic vision I didn't
wish transmitted to the listener.
