I have located the screw under the serial number plate, & this
releases the XLR assembly from the body, but how to get access to the
capsule??

7mm nutdriver up the hole that is left by removing the XLR assembly.

IME you also need to scrape out a bunch of silicon adhesive goo, to get at
the nut. Is there any way around that?

No. Some of them were shipped with the goo, some were not. It's probably
a good idea to put more RTV up there when you reassemble it.
