Default LDC Capsule Connection

For a center-terminated LDC capsule, which connection is the center
one? It's the diaphragm, right? The backplate is the one that is
normally screwed right into the side of the capsule?

It's whichever one you want.

How you want to wire it depends on the capsule. Think about what the
configuration that would give you _least_ parasitic capacitance across
the capsule would be. This sometimes means lowest capacitance from the
input to ground, but not always.

You are correct. The distinction is usually between center terminated or
edge terminated. Both relate to how the connection is made to the
diaphragm, not the back plate. As the back plate is usually solid brass, or
similar, we usually don't care where the connection is made.
