Your theory is too "simple", real theory says it can swing to more than
twice the DC supply, even without any leakage inductance, me thonks you
need a theory check.

Considering a PP stage operating with secondary unloaded, plate voltages
on
one side have to go negative for the voltage on the other side to exceed
twice the supply.


Exactly, there is nothing to prevent that from happening.
